The salmon is cured by
traditional methods (no brine injection) and then allowed to settle and gloss
naturally. Smoking takes place in state
of the art cross-flow cold smoking kilns which use natural smoke (not machine
generated) from a blend of selected local hardwoods. This allows each fillet to develop its full
texture, flavour and colour.
